Quick, one serving.
1 tsp Olive oil
1/2 cup Sliced carrots
1/4 cup Green onions
1/2 cup Mushrooms
4 oz Cooked pork
1/4 cup Water chestnuts
1/4 cup Cooked brown rice
2 tsp. Soy sauce
Saute carrots in oil. Add onions and mushrooms and saute a few minutes longer. Add pork, water chestnuts, rice and soy sauce. Heat through.
