Ingredients

2 bags Ore Ida potatoes Obrien

2 can Cans black beans, drained

2 cans Chopped tomatoes, drained

2 tbs Olive oil

Salt

Pepper

8 Eggs

Lowfat grated cheese, optional

Preparation

spray pam in large, deep skillet. add potatoes and cook unitl brown, adding oil if needed. Add beans and tomatoes, cook untill all is heated through. salt and pepper to taste.

divide up on plates. top with 1 fried egg.
