| 12 oz | Precooked shrimp, peeled & deveined |
| 1 | Egg white, lightly beaten |
| 1 tbs | Cilantro, chopped |
| 1 | Scallion, finely chopped |
| 1 tsp | Cornstarch |
| 1 tsp | Minced fresh ginger |
| 1/2 tsp | Salt |
| 6 | Thin sliced white bread |
| | Cooking spray |
| | Cilantro leaves (for garnish) |
| | Sesame seeds (garnish) |
Preheat oven to 400 degrees. In a food processor pulse shrimp until finely chopped. Add egg white, cilantro, scallion, cornstarch, ginger and salt. Pulse several times until ingredients are thoroughly combined.
Spray baking tray with cooking spray. Spray each piece of bread (top side) and cut into 4 triangles. Spread shrimp mixture over each triangle, distributing ebenly.
Bake 10-12 min or until golden brown. Sprinkle with toasted sesame seeds and garnish with cilantro.
Sometimes I leave out the ginger and replace it with minced garlic.
