Italian Three-Bean Chili

Vegetarian! It's hearty and flavorful, yet it isn't heavy. Serve with a simple side salad.

Ingredients

1/2 c Red onion, chopped

1 clove Garlic, minced

2 Tbls olive oil

15 oz Can tomato sauce

15 oz Can black beans

15 oz Can Great Northern beans

14 1/2 oz Can diced tomatoes

1 c Frozen soy beans

1 4 oz Can green chiles

1/2 cup Water

1 Tbls balsamic vinegar

1/3 cup Sliced black olives

2 Tbls fresh cilantro, chopped

1 c Shredded mozzarella

rice (at Least 6 servings)

Preparation

In a large saucepan saute onions and garlic in olive oil over medium heat until tender.

Rinse and drain all the beans. Add beans, tomato sauce, diced tomatoes, chiles, water, and balsamic vinegar. Stir to combine. Bring to a boil, then reduce heat. Simmer, covered, for 20 min, stirring occasionally.

Prepare rice according to directions.

Stir in olives and cilantro. Simmer, covered for 5 min.

Ladle into bowls over rice and top with mozzarella cheese.

Cook's Notes

You can serve with pasta or couscous as well.
