quick, easy to make, tastes like it took hours.

Ingredients

One Largish zuchini (not state fair large though) quartered and sliced

One Largish yellow squash, quartered and sliced

One Med onion chopped

One half of A med green pepper chopped

2 Large cans of diced tomatoes

1 package McCormicks Zesty spaghetti seasoning.

1/2 To 3/4 of a 16oz box of ziti

half a cup Parmesan cheese

1 cup Moz. cheese.

Preparation

in a saucepan combine zucchini, squash, onions, green peppers, cans of tomatoes, and seasoning packet. Simmer over med heat until all veggies are tender.

In another pot, boil ziti noodles according to package instructions. Drain and rinse well when done.

preheat over to 350 degrees

IN a large casserole dish stir noodles, sauce and parmasean cheese together. Cover with moz. cheese evenly over the top. Place in oven until cheese on top is melted and slightly browning.
