Beef Goulash

Make-ahead freezer meal for the Crock-Pot!

Ingredients

2 lbs. Beef rump roast, cubed

2 c. Chopped onion

1 Red bell pepper, chopped

1 c. Sliced carrots

1 tsp. Crushed garlic

1/3 c. Ketchup

1 tbsp. Worcestershire sauce

2 Dashes Tabasco sauce

1 can Beef broth

2 tsp. Paprika

1 tsp. Salt

4 Medium potatoes

Preparation

Brown the beef cubes in hot oil. Brown the onion and red pepper.

To make ahead: Drain and cool. Mix all ingredients and place in a gallon Ziploc bag. Label and freeze.

To serve: Thaw and put into a Crock-Pot. Add peeled and cut potatoes, making sure the potatoes are under the liquid. Cover and cook for 4-6 hours.

Summary of Processes: Cube 2 lbs. beef. Chop 2 c. onion and 1 red bell pepper. Mince 1 tsp. garlic. Slice 1 c. carrots. Serve with: green salad
