25 minute vegetarian burritos that actually taste good!

Ingredients
1 pkg Mahatma Saffron Rice
1 tbsp Margarine (for rice)
2 Crowns broccoli
1 Red bell pepper
1 Handful baby carrots
1 cup Fresh spinach
1 pkg Sliced pepperjack cheese (12 slices)
4 Oversize burrito tortillas
1 cup Salsa
2 cups Water
t tsp Ground pepper
1 tbsp Garlic salt
Preparation
Begin preparing the rice as directed, while it cooks, prepare the rest.
Pour the water into a frying pan/wok with a lid
Add the carrots, garlic salt, and pepper to the pan and cover.
Cook over medium/high heat for 5-10 minutes.
Split the broccoli into small stalks
Dice the bell peppers.
Add the broccoli and peppers to the pan and cover.
Cook covered until all water evaporates, approximately 10-15 minutes, stirring occasionally.
Suggestion: Use the steam from the carrot/broccoli/pepper pan to warm your tortillas for 15-30 seconds. They will be pliable and easy to work with.
Add 3 slices of pepperjack to each warmed tortilla. Cover with cooked rice, spinach, the veggie mix, and salsa. Wrap into burrito and enjoy!
