Melt the margarine in a 12" skillet.
Stir in the cornstarch and let
cook 2 minutes. Stirring often
with a fork, add soymilk, 1 1/2
teaspoons of salt, and one dash
pepper and cook until thickened,
keeping the mixture smooth.
Add the cauliflower and broccoli,
then blend in the remaining
salt and pepper. Cover and cook,
stirring often, until vegetables are
tender.
Spray a 13" x 9" x 2" baking
pan with oil and spoon the mixture
into it.
Preheat oven to 350 degrees.
In a 1-quart mixing bowl, toss
together the bread and the cheese.
Sprinkle evenly over the cauliflower-broccoli
mixture. Bake
for 35 minutes or until topping
is lightly browned.
