Ingredients

1 lb Chicken breast, cut into strips
1 pkg Taco seasoning mix
1 can Black or pinto beans, drained, rinsed
1 can Whole kernel corn with red & green pepers, undrained
1/4 cup Water
Tortillas, if desired

Preparation

Spray 10 in skillet with cooking spray. Add chicken to skillet; cook over medium high heat 8 to 10 minutes, stirring occasionally, until no longer pink in center.

Stir in taco seasoning mix, beans, corn and water. Cook over medium high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened. Serve with tortillas.

I didn't have any taco seasoning so substituted fajita seasoning. I added sliced onions into the meat mixture and served shredded cheese, salsa, light sour cream and chopped tomatoes on the side. Very delicious.

We forgot to use the taco seasoning so we replaced it with some Goya seasonings and a little paprika and it came out really good. It also tastes good with some sour cream anhd tortillas. Easy recipe, quick prep.
