Easy to make burritos for a quick lunch or dinner
1/2 cup Pinto beans, mashed
1/2 cup Diced tomatoes
1 tbsp. Diced onion
Garlic powder, just to sprinkle
1 tbsp. Salsa
1/4 cup Shredded part-skim mozzarella or reduced fat cheddar cheese
1 Whole wheat tortilla
Lay tortilla flat. Spread the beans over the tortilla. Top with tomatoes, onion, garlic powder, salsa and cheese. Fold the ends into the middle and roll the tortilla up. Place the wrap, seam side down and cook in the microwave for 60-90 seconds. Eat hot or cold.
