Beef & Bow Tie Pasta

Low Fat Ways To Cook Pasta

1 cup = 5 points

Ingredients

9 oz Flank Steak

3 cups Green beens

1 Med. Yellow Pepper (cut into 1" pieces)

1/4 cup Minced parsley

2 tsp Whole thyme

1/4 Tps pepper

Dash of red pepper

1/2 cup Chopped shallots

2 tsp Dry sherry

2 cups Cooked Farfalle noodles

1/4 Tps salt

Preparation

Partially freeze flank steak to make it easier to cut diagonally across the grain into 1/8 inch thick strips.

If green beans are fresh stem them with the yellow pepper - otherwise just the yellow pepper needs to be steamed. if steaming both start with green beans for about 8-9 minutes and then add yellow pepper for an additional 2 minutes.

Combine parsley and next three ingredients and a bowl with the steak and toss well.

Coat skillet with Pam and place over med/high heat until hot before adding steak, shallots, and dry sherry. When to desired level of doneness drain fat and other juice drippings.

Combine cooked pasta, beef mixture and been mixture; toss lightly and servce hot.
