| 1 cup | Rinsed Lentils |
| 3/4 cup | Water |
| 1/2 cup | Chopped Onion |
| 1 can | (16 oz.) tomatoes (chopped) |
| 2 | Thinly sliced carrots |
| 1/2 cup | Sour cream |
| 1/2 | TSPN. Salt |
| 1/4 | TSPN. Pepper |
| 1/4 | TSPN. Garlic Powder |
1. Combine lentils, water, seasonings, onion, and tomatoes.
2. Place in 2 Quart Casserole Dish.
3. Cover lightly with lid or foil.
4. Bake at 350 degrees for 30 minutes.
5. Remove from oven and add carrots. Stir.
6. Cover and bake 30 minutes longer.
7. Remove cover and bake uncovered for 5 minutes.
9. Remove from oven and spread sour cream over the top.
10. Let cool for about 5 minutes. Then serve!
When I made this for my husband he absolutely loved it! Now we have it in our home quite often. The best part about it is all the "good for you" nutrient filled food it contains. And because it doesn't include meat it doesn't take nearly as long and is much more enjoyable for me since I tend to get a little squeamish about meat. I hope you enjoy it too!
