Awesome hearty vegetarian sandwich.

Ingredients

1 package Six crusty wheat hoagie rolls

1 package Pre-made guacamole (the real stuff! Or you can make your own or use avacado slices)

1 package Crumled feta (garlic, oregano & lemon flavored preferably)

1 package Sprouts (I like the spicy ones with radish)

2 Large, fresh tomatos, sliced

1 package Spring mix lettuce (or whatever kind of lettuce you prefer - anything but iceberg!)

Preparation

Slice hoagie rolls in half. I prefer to scoop out some of the interior bread so there's more room for veggies.

Line the bottom half of the bread with sprouts, guacamole, feta, sliced tomato and lettuce. Close the sandwich and enjoy.

Easy!

Cook's Notes

I've made this sandwich a few different ways, but the one listed above is my favorite. Another good way is to take fresh avacado, feta and a little fat free italian dressing and mush it all up into a sort of... mediterranean guacamole (?) and spread that on the sandwich. Keeps the feta from falling off, at least.
