Baked honey apricot chicken

Ingredients

6 Chicken breast or thigh fillets

1 tbsp Honey

6 Apricot halves, tinned

2 tbsp Creme fraiche

1 tsp Olive oil

400g Udon noodles

Preparation

Preheat oven to 180c

Add honey, apricot halves, creme fraiche & olive oil in a bowl, mix until blended. Place chicken into the mix & coat it well.

Pour all the ingredients into a casserole dish & bake at 180c for 25 minutes, or until chicken is cooked through.

Cook noodles as per packet.

Cook's Notes

Great served with steam veges. Noodles can be replaced with cous cous or rice. Noodles & honey chicken can be combined & left to marinade in fridge before cooking.
