Breaded Pork Chops

Ingredients

2 cups Orange Juice

1 1/2 cups Seasoned Bread Crumbs

2 tsp Seasoned Salt

4 Boneless Pork Loin Chops (1/2 inch thick and 4 oz each)

3 tbsp Olive Oil

Preparation

Place orange juice in a shallow bowl. In another shallow bowl, combine bread crumbs and seasoned salt. Dip pork chops in orange juice, then coat with crumb mixture.

In a large skillet, cook pork in oil over medicum heat for 7 - 9 minutes on each side, or until juices run clear.

Cook's Notes

The original recipe for this called for boneless skinless chicken breasts. Both chicken and pork are good.

Just tried this recipe tonight -- a big hit w/ my husband & daughter. The chops were so tasty and tender. Be careful not to turn up the fire too high under the skillet (I always use cast iron) b/c the breading can get browned, or even burned, too quickly before the chop is cooked all the way through. I suggest medium heat -- you can always cook it a little longer if necessary.
