Chili Lime Salmon

This is a quick and easy preparation that is especially fitting for a summer patio meal with cocktails!

Ingredients

4 Salmon fillets, 6 oz each
1 tsp Coriander
1 tsp Sugar
1/4 tsp Chili powder
1/4 tsp Cumin
2 tsp Lime juice
4 Lime wedges

Preparation

1. Combine coriander, sugar, chili powder, cumin, and lime juice; spread over salmon.

2. Grill skin side down over medium heat for about 15 minutes. Don't turn it over! Meat will cook from the bottom up and flake easily with a fork when tested.

3. Serve with lime.

We enjoy this meal with a pasta & vegetable toss, either hot or cold.
