chicken and corn soup

Ingredients

2 Shallots sliced

Small piece ginger peeled and grated

20mls (1 aussie tablespoon) oil

420g Can creamed corn

500mls Chicken stock

1 Chicken breast fillet, very fiely chopped

Preparation

cook the spring onions and ginger in the oil for 1 minute. add the creamed corn and heat. pour in the stock and stir until it starts to simmer.

tip the chicken into the stock and stir for 2 minutes don't allow the soup to boil otherwise the chicken will toughen. once the chicken has utned completely white, season then serve
