Sardines with Lemon and Hot Sauce

Get a burst of omega-3s with this zesty sardine dish. If fresh sardines are available at your local fish market, try them in place of canned; just season them with salt and pepper, grill 2 minutes per side, and serve with hot sauce and lots of lemon wedges for squeezing. Serve two fresh sardines per person.

Ingredients

3 tablespoons Extra-virgin olive oil

2 tablespoons Fresh lemon juice

1/2 teaspoon Dijon mustard

3 (3.75-ounce) cans Sardines packed in water, drained

Hot pepper sauce

10 ounces Spring mix or mesclun greens (8 to 10 cups)

Salt and freshly ground black pepper

Preparation

Whisk together oil, lemon juice, mustard, and a pinch of salt and pepper in a large mixing bowl. Lay sardines on a plate and drizzle with 1 tablespoon of the dressing; sprinkle with pepper and a dash or two of hot pepper sauce.

Add greens to the bowl; toss to combine. Divide salad among plates, top with sardines, and serve with extra hot sauce.
