Rustic Tomato Soup

Ingredients

1 tbsp Extra virgin olive oil

3 cloves Garlic, coarsely chopped

1/4 tsp Red pepper flakes

28 ounces Tomatoes, diced

2 tbsp Fresh basil, chopped

11 ounces Vegetable juice, low sodium

1 Salt

1 Pepper

Preparation

Directions

Heat oil in medium saucepan over medium-low heat. Add garlic and red pepper flakes, if using; stir occasionally until softened, about 3 minutes.

Add tomatoes with juice, basil, and vegetable juice. Increase heat to medium and simmer for 15 minutes.

Season with salt and pepper to taste and serve hot.
