The South Beach Diet

You don't have to give up this breakfast favorite on South Beach; slightly modified with sweet turnips and turkey breast, our modern interpretation is delicious. Try it topped with a poached egg.

Ingredients

2 teaspoons Extra-virgin olive oil

1 Small onion, chopped

1 Small red bell pepper, diced

2 Medium turnips, peeled and cut into ½-inch dice

½ teaspoon Dried thyme

1 pound Cooked skinless roast turkey breast, cut into ¼-inch cubes

¼ cup Fat-free half-and-half

Salt and freshly ground black pepper

Preparation

Heat oil in a large nonstick skillet over medium heat. Add onion and bell pepper and cook until softened, about 3 minutes. Add turnips and thyme; stir and cook until tender, about 10 minutes. Stir in turkey and half-and-half; simmer until liquid has thickened slightly, about 3 minutes. Season with salt and pepper to taste.
