Chimpa'a Chicken

Delicious, healthy, dinner. The chicken should be browned sealing the juices inside. We use Omaha chicken breasts. They come prepackaged frozen in 4 oz servings.

Ingredients

4-5 oz Per person boneless-skinless chicken breast trimmed of any excess fat, cut-up into @1-2" pieces

1/4 - 1/3 cup diced tomatoes( best cherry tomatoes)

1/8 cup Chopped green olives with pimentos

4-6 Artichoke halves in brine diced ( paper towel squeezed dry)

Seasoned salt

Mrs. Dash chicken

Teaspoon (more or less) dijon mustard

Tablespoon (or less) canola oil

Preparation

Prepare all ingredients in advance

Season chicken on one side and spread dijon mustard across top.

Heat skillet. Add oil. Oil only needs to lightly coat pan. Spill out any extra oil after oil is hot.

When skillet is very hot add chicken pieces. Lower heat to medium. Turn each piece over when browned, then turn again when the other side is browned.

Add tomatoes, olives and artichokes

mix together and cover skillet for 5 minutes

Serve with 1-2 Tablespoons brown or white rice

and 1 cup of steamed vegetables.

Your appetite will be satisfied and your body will be happy.

Cook's Notes

Very little saturated fat in this recipe. Lots of protein and good carbohydrates. I would guess that this meal is @ 600 calories. If you have a sweet tooth grab a slice of watermelon.
