Banana Bread

Ingredients

1 1/3 c Mashed ripe bananas (2 large)
2/3 c Sugar
1/4 c Milk
3 tbsp Vegetable or canola oil*
1/2 tsp Vanilla
3 Eggs
2 2/3 c Bisquick

Preparation

Heat oven to 350 F and grease or Pam the bottom of a 9x5x3" loaf pan.

Stir bananas, sugar, milk, oil*, vanilla and eggs in a medium bowl.

Stir in Bisquick and pour into pan.

Bake 50-60 minutes, checking center with a toothpick.

Cover pan with foil at 45 min. if browned sufficiently.

Cool 10 minutes, loosen sides of loaf from pan-- cool completely before slicing.

Cook's Notes

Variations: *applesauce can be substituted for half of the oil. Add chocolate chips when adding Bisquick (either thicken batter with more Bisquick or add 1/2 c. choc. chips after putting it in the oven.)
