Ingredients
Lemon-Blue Cheese Dressing:
½ cup Jarred blue cheese dressing
¼ cup Crumbled blue cheese
1 tbsp. Lemon juice
½ tsp. Grated lemon zest
Salad:
12 cups Shredded romaine lettuce leaves
2 cups Diced cooked chicken
2 cups Diced cooked roast beef, ham, or turkey
1 cup Peeled, diced cucumber
1 Ripe avocado, diced
4 Plum tomatoes, diced
½ cup Crumbled blue cheese
2 Hard cooked large eggs, chopped
4 oz. Thick sliced bacon cut into ½” pieces, cooked
Preparation
1. Combine dressing ingredients in small bowl
2. In a large bowl, toss the lettuce with ¼ cup of the dressing and place on a large platter. Arrange the remaining ingredients on top of the lettuce. Serve the remaining dressing on the side.
