• Cook sweet potatoes tender in skins (about 30 min) in boiling, salted water.
• Drain potatoes, peel.
• Place in greased shallow baking dish
• Heat oven to 350
• Meanwhile in a heavy saucepan, combine orange juice, orange rind, cornstarch, melted butter, brown sugar, white sugar, and salt. Mix well
• Cook, stirring until thick.
• Pour over potatoes
• Bake at 350 for 30 minutes, basting occasionally.
