Preparation
1. Brine chicken in 1/8 cup salt in a quart of water. (optional)
2. Cook rice with frozen vegetables, ideally a day ahead.
3. Saute chicken with yellow onion, ginger, and garlic. Set aside.
4. Scramble eggs with salt and pepper. Set aside.
5. Heat oil in wok. Add soy sauce. Mix in rice, eggs, green onion, and chicken. Add salt and pepper to taste.
