A quick sorta-from-scratch vegetable soup. This is a good way to make a new meal out of leftover veggies, rice or pasta.

Ingredients
1 Large (family size) can V-8
Whatever vegetables you want, such as chopped onions, peppers, frozen vegetables, etc.
Pre-cooked/soaked canned beans (optional)
Pre-cooked pasta or rice (optional)
Seasonings of choice, such as pepper, chili powder or tabasco, fresh or dry herbs - use whatever you like.
Preparation
Empty the entire large can of V-8 into a stock pan. Simmer over low heat. Add vegetables, beans, rice, pasta, etc. Season it to taste and cook 10-15 minutes or until vegetables are tender enough to eat.
Cook's Notes
You could use uncooked beans, rice, or pasta, but the soup would need to simmer for a lot longer.
