Cheesy Salmon Quesadillas

Ingredients

Cooking spray

one 6-oz. Can salmon

4 oz. Mont. Jack cheese, shredded

one 8-oz Jar roasted red peppers, drained and sliced

2 Green onions, sliced

Four 6" flour tortillas

1 Avocado, pitted and sliced into 4 pieces

1 cup Salsa

1/2 cup Chopped cilantro

Preparation

1. Heat a large skillet over medium heat and spray w/spray.

2. Divide the salmon, cheese, peppers, and green onions among two tortillas. Top with remaining two tortillas.

3. Put the quesadillas in the heated pan, one at a time, and cook, flipping once, until the cheese is melted and the tortillas are golden brown on both sides, 4 to 5 minutes per side. Remove to a large cutting board and slice into fourths.

4. Serve each person half a quesadilla garnished w/one slice of avocado, 1/4 cup salsa, and 1 TB cilantro.
