Salmon Loaf

Ingredients

2 cans Salmon or tuna - 1lb.each

1 cup Saltine crackers, crushed

1/4 tsp Pepper

1 tsp Salt

4 Egg yolks

2 tsp Chopped parsley

1/2 cup Lemon juice

1 cup 2% milk - hot

4 tbsp Butter, melted

4 Egg whites

Preparation

Break up salmon or tuna, discarding bones and skin.

Add all ingredients to fish, except egg whites.

Beat egg whites until stiff and fold into fish mixture.

Bake @350, in a greased loaf pan for 70 minutes.

Serve with lemon slices and tarter sauce.
