Ingredients

1 cup Orzo pasta
1-1/4 tsp. Olive oil
3/4 Medium onion, minced
7 ounces Frozen chopped spinach, thawed and well drained
2 tbs. Plus 2 tsp. feta cheese, crumbled
Freshly ground black pepper

Preparation

Cook the orzo according to package directions. Drain. Heat the oil in a skillet over medium high heat. Add the onion and saute for 5 minutes. Add the spinach and saute for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper and toss well. Serve immediately.

This recipe is alright, a little bland though. i would suggest added more onions and feta cheese for some added flavor.

For a higher fiber and protein content try using Quinoa instead or Orzo. I saute onions and fresh spinach a lot. The added ingredients sound great!
