Roast Beef Hash & Eggs

Uses beef and potatoes leftover from a roast for a quick meal. Good served with toast or English muffins and fruit.

Ingredients

2 cups Leftover beef roast, shredded
2 cups Cut up cooked potatoes
One-half Teaspoon salt
8 Eggs
One-quarter cup shredded Cheddar cheese

Preparation

Spray a skillet with non-stick spray. Add potatoes and beef and salt. Cook over medium heat until browned, stirring occasionally.

Move meat mixture in skillet to make 8 "wells" or bare spots. Break an egg into each well. Sprinkle with cheese. Cover and continue cooking until eggs are set to desired doneness.

If you prefer scrambled eggs: beat eggs with a little milk and cook in a separate skillet.
