Spray a skillet with non-stick spray. Add potatoes and beef and salt. Cook over medium heat until browned, stirring occasionally.
Move meat mixture in skillet to make 4 "wells" or bare spots. Break an egg into each well. Sprinkle with cheese. Cover and continue cooking until eggs are set to desired doneness.
If you prefer scrambled eggs: beat eggs with a little milk and cook in a separate skillet.
