An easy to make satisfying salad for lunch, dinner, or as a snack
1/2 Cucumber diced
2 Roma tomatoes sliced
1/4 Purple Onion diced
1/4 Bell Pepper diced
1/2 tsp Basil
1/4 tsp Oregano
1/8 tsp No-Salt
1 tbsp Red Wine Vinegar
1 tsp Virgin Olive Oil
Add spices, oil, and vinegar, whisk to combine. Add all other ingredients, toss and serve.
The longer this sits (up to 1 day) the better it is. I suggest letting it marinade in the fridge for at least 1 hour before serving.
