Chicken and Shrimp Jambalaya

Ingredients

1 cup Sliced celery

1 Lg. Onion chopped

1 14 1/2 oz. Can low-sodium tomatoes, cut-up.

1 14 1/2 oz. Can reduced-sodium chicken broth

1/3 cup Tomato paste(1/2 6 oz. can)

1 tbsp Worcestershire sauce

1 1/2 tsp Cajun seasoning or 1 recipe homemade Cajun seasoning(see recipe below)

1 lb. Skinless, boneless chicken breast or thighs, cut into 3/4 in. pieces.

1 1/2 cups Instant rice

8 oz. Cooked, cleaned shrimp.

3/4 cup Chopped sweet pepper

Preparation

In crock pot all but rice, shrimp and sweet pepper. Cook on low-heat 5-6 hours or on hight-heat 2 1/2 to 3 hours. Stir in rice, shrimp and sweet pepper. Cover and let stand 10 to 15 mins. or until most of liquid is absorbed and rice is tender.

Homemade Cajun Seasoning: mix 1/4 tsp each of white pepper, garlic& onion powder, paprika and black pepper, and 1/8 to 1/4 tsp ground red pepper.
