Easy to make.
1 2oz. Whole-wheat or white pita
1/4 cup Hummus store-bought
1/4 cup Sliced Cucumber
1/4 cup Sliced Red onion
1/4 cup Cherry tomatoes or sliced tomato
1 tsp. Extra-virgin olive oil
Salt & pepper to taste.
Fresh chopped parsley if desired.
Place pita in toaster if desired, spread hummus on top. Arrange veggies on top and drizzle oil over, add salt & pepper to taste. Sprinkle parsley if desired. Serve with soup if desired. Add points for soup.
