Ingredients
1 tsp. Extra-virgin olive oil
1 whole egg
1 Egg white
1 1oz Slice Italian bread
1 Large tomato
1 tsp Balsamic vinegar if desired
Salt & pepper to taste
1 Fresh basil leaf if desired
Preparation
Place oil in small nonstick skillet over med. heat. Add lightly beaten eggs. Let cook until lightly brown. Flip and cook other side cut into 4 wedges. Salt & pepper to taste. While cooking slice tomato. Place sliced egg bewteen slices of tomato on top of bread. Insert basil. Drizzle balsamic vinegar over all, if desired.
