Brats topped with stuff similar to the Italian Sausage you get at fairs

Ingredients

2 Bratwursts that have been boiled (see note)

1 tbsp. Olive oil

1/4 Green bell pepper, sliced

1 Small or medium onion, diced

1 Roma tomato, chopped

1/2 cup Fresh mushrooms, sliced

1/2 tsp Mrs. Dash Tomato, Basil Garlic seasoning

2 tsp. Fresh chopped basil (opt)

2 Hoagie buns (toast if desired)

Preparation

Grill brats over medium heat, turning frequently, till browned.

Meanwhile, heat oil in skillet. Add onion & green peppers. Saute till onions & peppers are tender. Add tomato and mushrooms; toss in Mrs. Dash seasoning & basil. Continue cooking, stirring frequently until the tomatoes and mushrooms are hot through.

Place a brat one each bun and top with vegetable mixture.

(If you don't have some way to grill the brats, you can make this ahead and heat up in microwave when ready to serve).

Cook's Notes

I always boil 1 or 2 packages of brats when I get them and freeze individually in fold-over sandwich bags. I place these in a zipper-style freezer bag. Leftover vegetable mixture is good mixed with leftover cooked rice and heated through in the microwave.
