| makes about 2 quarts | |
| 4 cups | Watermelon Chunks (or other fruit) |
| 2 cups | COLD water |
| 3 cups | Cold water |
| 1/4 to 3/4 cups | Simple syrup * |
| 2-3 | Tbls Fresh Lime Juice |
| | Pinch of salt |
Directions:
1. Puree 4 cups of diced or chunked fruit with 2 cups COLD water in a blender.
2. Strain through seive.
3. Add 3 more cups Cold water, 1/4 (or more) simple Syrup, 2-3 Tbls lime juice and a pinch of salt. Add more syrup, or water to suit fruit.
4. Serve well chilled with a wedge of lime or melon.
*Directions for Simple Syrup
2 cups of water
2 cups of sugar,
combine over medium heat. Bring to boil and boil until clear and all sugar is dissolved. Store in mason jar in fridge. Keeps well.
I used a medley of frozen fruits which I thawed first. It was GREAT. I can't wait to try it with Melons.
