Ingredients
2 cans (5 ounces each) Chunky white meat chicken packed in water, drained
1 1-2 cups Chopped Romaine lettuce
2 Roma tomatoes, chopped
One-half Cup grated Fresh Parmesan cheese
Two-thirds cup Fat-free Caesar dressing
2 Whole-wheat pita breads, cut in half
Preparation
In a small bowl, add the chicken, lettuce, tomato, Parmesan cheese and Caesar dressing. Toss to mix evenly. Cover and place in the refrigerator for 10 minutes.
Stuff the chicken mixture into the pita bread halves. Serve immediately.
Cook's Notes
Rinse the chicken with water after draining to reduce the sodium or use grilled boneless, skinless chicken breasts.
To make it a meal, add a side of baked potato chips, carrot sticks, and sliced pineapple and bananas.
