This yummy breakfast pizza is easy and quick. You can customize it to your own tastes.

Ingredients

1 package (8oz) pork or turkey sausage links
6 Large eggs, beaten or equivalent in egg subsitute
2 Pkgs (8oz) each ready to serve pizza crusts or 4 pita breads (6 in dia)
1 1/2 cups Shredded Cheddar cheese (6 ounces)

Preparation

Heat oven to 400 degrees. Spray 10 inch nonstick skillet with cooking spray, heat over medium heat.

Cook sausage in skillet about 3 minutes, stirring occasionally, until brown. Remove sausage from skillet; drain.

Pour eggs into skillet. As mixture begins to set at bottom and side, gently lift cooked portion with turner so that thin, uncooked portion can flow to bottom. Don't stir. Cook 4-5 minutes until eggs are thickened but moist.

Place pizza crusts on ungreased cookie sheets. Sprinkle all with half the cheese. Top with eggs and sausage. Sprinkle with remaining cheese. Bake 10 to 12 minutes or until cheese is melted.

Cook's Notes

If you add ingredients, you may need to add slightly more cooking time to let it heat through. Cut down fat & cholesterol by using turkey sausage, egg substitute and lowfat cheese.
