Corn Fritters with Herb Butter

These are great especially in the summer when fresh corn on the cob is in season

Ingredients

Corn Fritters:

1 large egg

1-1/2 cups Corn kernels, fresh or frozen (thawed)

1/2 cup Flour

1/2 tsp Baking powder

1/3 cup Milk

1 tbsp Chopped fresh parsley OR 1 tsp dried

1 tbsp Chopped fresh basil OR 1 tsp dried

1 tbsp Chopped fresh chives OR 1 tsp dried

Salt and pepper to taste

1 tbsp Unsalted butter, melted, OR 1 Tbsp vegetable oil

Extra butter or oil for cooking

Herb Butter:

4 tbsp Butter, softened

1 tbsp Chopped fresh parsley OR 1 tsp dried

1 tbsp Chopped fresh basil OR 1 tsp dried

1 tbsp Chopped fresh chives OR 1 tsp dried

Salt and pepper to taste

Preparation

1. To make fritters, beat egg in a large bowl. Add corn and mix well. Stir in flour, baking powder, milk, herbs, salt and pepper. Add 1 Tbsp melted butter or oil and mix until blended.

2. Heat a large, lightly buttered or oiled skillet or griddle over medium heat for 1 minute. Add heaping tablespoons of the corn batter to the pan and cook 2 minutes. Using a spatula, gently flip fritters. Cook 2-3 minutes more until golden brown. Repeat with reamaining batter, adding more butter or oil as needed.

Makes about 8 fritters.

3. To make herb butter, combine ingredients in a small bowl. Scoop into serving dish.

4. Serve fritters warm or hot with a dollop of herb butter on the side.
