Botty's Twice Baked Potatoes

Classic Twice Baked Potatoes with a little Botkin Twist

Ingredients

2 Large Potatoes

8 oz. Sour Cream

2 Strips Cooked Bacon, Chopped

1/4 cup Chopped Green Onions

Garlic Powder (as desired)

1 tsp Margarine

1/4 cup Milk

1/4 cup Cheddar Cheese

Preparation

Preheat oven to 450 degrees.

Place Potatoes in Microwave on High for 7 minutes to quickly soften. (if cooked solely in microwave, the skin will be too soft for recipe)

Place potatoes in oven for 15 minutes or until a knife can easily penetrate the flesh of the potatoes.

Remove potatoes from oven and cut in half long ways.

Scoop out flesh of potato making sure to leave the skin in tact.

Combine sour cream, cooked chopped bacon, onions, garlic powder, margarine and milk with the potatoes. Mix/mash well until consistency is similar to mashed potatoes.

Carefully scoop potatoes back into skin. Sprinkle cheese on top of potatoes and place in oven for 5 minutes.

Use as a side to any dish.
