Asian Turkey Wraps

Ingredients

1/2 cup Shredded carrots

1/2 cup Water

1 lb Ground turkey

1 can 8oz water chesnut, drained and chopped

1 pkg Sliced baby portabella mushrooms

2 Tbls minced fresh ginger

3 Garlic cloves minced

1/2 cup Low-sodium teriyaki sauce

3 Tbls creamy peanut butter

1 Tbls sesame oil

1 Tbls rice vinegar

Lettuce

Preparation

Cook carrots in 1/2 cup of water. 3-5 minutes until carrots are softened and water evaporated- high heat.

Reduce heat to medium- cook turkey.

Add carrots, and remaining ingredients. Increase heat to med-high and cook- stirring constantly 4 minutes.

Wash lettuce.

Wrap about a 1/2 cup of turkey mixture in a "stem" of lettuce.

Cook's Notes

If we want to add a little spice to it then, I mix about a 1/4 cup of low-sodium teriyaki sauce, 1 tsp hot chinese mustard, 1 tsp hot chinese chili sauce together. Those who want it spicy, just add tbls or so to your wrap. I also like to be generous with the ginger.
