Bean Tortilla Wrap

A ridiculously easy recipe! Delicious and a great source of protein and fiber. My favorite vegetarian dish! This is a recipe that the whole family (kids too!) will enjoy.

Ingredients

1 tbsp. Olive oil

1 Crushed clove of garlic

1 can Black beans (drained)

1 can Corn (drained)

1 can Red kidney beans (drained)

6 Whole wheat tortilla wraps

1 cup Shredded cheese

Salt and pepper to taste

Diced tomatoes (if desired)

Preparation

1. Simmer the garlic and olive oil in skillet over high heat for two minutes (or until the garlic begins to brown.)

2. Add black beans, corn, red kidney beans, and tomatoes (if desired) to skillet and reduce to medium heat. Cook for about 10 minutes (stirring occasionally) or food is heated thoroughly. Season. (Other ingrediants may be added here- green peppers, onions, whatever suits your taste!)

3. Warm up tortilla wraps in microwave. (15 seconds should do the trick.)

4. Sprinkle tortilla with cheese (salsa may be added for extra flavor), add bean mixture, wrap it up, and enjoy!

Cook's Notes

This recipe is all about being prepared with your tastes in mind. Pretty much anything goes- anything can be added to your skillet concoction. This bean mixture is really just the basis of many different recipes that may form in your kitchen. Get creative! I can also say that having watched kids eat these wraps... they never noticed that there was no meat in them. The kidney beans provide the right texture and flavor when mixed with the other ingrediants to act as a meat substitute. A great recipe for vegetarian beginners!
