Broiled Salmon with Creamy Lemon Sauce

Phase 1

Ingredients

1 tbl Olive oil
1 clove Garlic, minced
1/4 cup Lemon juice
2 tbl Capers
1 t Lemon-pepper seasoning
1/2 cup Fat-free sour cream
1 1/2 lb Salmon fillet

Preparation

Preheat oven to 350 F. Coat baking sheet with cooking spray.

Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low. Stir in the lemon juice, capers, and lemon-pepper seasoning and cook for 5 minutes. Add the sour cream and cook for 5 minutes, or until heated through.

Meanwhile, place the salmon on the prepared baking sheet. Bake for 20 minutes, or until the fish is just opaque. Serve with the sauce.

I like to serve this with spinach. Take as much spinach as you like. Squish one or two cloves of garlic and a sprinkle of olive oil and put in microwavable dish with spinach. Cover. Microwave for 30 seconds and the spinach will wilt. Drain water. Serve with salmon and Creamy Lemon Sauce. DElicious.
