1. Put all ingredients but the cilantro in the crock pot.
2. Leave to cook overnight or start in the morning for dinner.
3. Taste to season with salt and pepper and add fresh cilantro.
4. stir and enjoy.
5. Can be eaten alone or with rice.
6. Can be cooked on the stove top as well, but the crockpot is easiest.
7. Soooo yummy.
