If you want to make this without meat, increase the vegetables and leave out the ham.
2 tablespoons Butter or margarine
1/2 cup Diced onion
1/2 cup Diced green pepper
1 cup Chopped cooked ham
8 Large eggs
1/3 cup Milk 1 cup grated cheddar cheese
Salt and pepper to season
Melt butter in a small skillet. Add onioin and green pepper and cook until softened and just very lightly browned. Add the ham and cook til heated through. Set aside. In a bowl, beat eggs and milk until light and fluffy. Stir in ham mixture and 1/2 cup of the cheddar cheese. Season with salt and pepper. Pour into a sprayed 10 inch round baking dish. Sprinkle the remaining 1/2 cup of cheese over top. Bake at 400 degrees F for 20 to 25 minutes, until golden brown.
