Kid-Friendly Food Allergy Cookbook

Recipe calls for gluten free noodles- but you can use regular if desired. I highly recommend going gluten free though. :)

Ingredients

1 lb Beef or ground lamb

1/2 c Onion, chopped

2 tsp Garlic, minced

1 25 oz Jar pasta sauce

3 t Butter (or sub)

2 t Cornstarch

1 3/4 c Milk

4 Eggs

3/4 c Parmesan, divided

1 13 oz Box rice macaroni cooked and drained

Preparation

In a large skillet cook meat, onion and garlic until meat is brown. Drain fat. Stir in Pasta sauce and simmer

In a saucepan melt butter and cornstarch together. Add the milk and cook until bubbly, about 3 min. Gradually stir in beaten eggs. Add 1/2 c parmesan. Stir until thick and bubbly. Remove from heat- set aside 1 c of this mixture for later.

Pour remaining sauce over the cooked noodles and mix until well coated.

In an 8x8 greased baking dish, layer half the noodle mixture, all of the meat mix, and the remaining noodle mix. Pour the remaining 1 cup mix over the top and sprinkle with cheese.

Bake in 350 oven for 40 min. Let stand 10 min before serving.
