Ingredients

1 6 oz. Pkg Long grain wild rice mix
1 4oz. Can of sliced mushrooms or 1 cup of fresh mushrooms
2 1/2 cups Water
1 10oz. Pkg. frozen chopped spinach or 3 cups of fresh spinach
3/4 cup Chopped onions
1 tbsp. Butter or margaine
2 tsp. Prepared mustard
1/4 tsp. Nutmeg
8 oz. Pkg. cream cheese

Preparation

Preheat oven to 375 degrees.

1. In a 2 quart casserole, combine rice and seasoning packet with mushrooms.

2. In a medium sauce pan, combine water, spinach, onion, butter, mustard and nutmeg. Bring to a boil, remove from heat, stir and pour over rice. Stir in cream cheese.

3. Bake, covered for 20 minutes. Stir and bake uncovered an additional 15-20 minutes until the rice is tender.

Number of servings depends on if you are serving it as the main course or a side dish to meat.
