Cold Chicken Curry Salad

My own recipe.

Easy, make ahead.

Ingredients

3 Cooked boneless, skinless chicken breasts, diced

2 Ribs of celery, sliced across the ribs

1 Medium sweet apple, diced

2 Carrots, grated

1/4 cup Raisins

1/4 cup Walnuts (optional)

Dressing

1/2 c. Mayonaisse

1/2 c. Sour cream

2 tbsp. Curry

Preparation

1. Toss chicken, celery, raisins, apple, carrots and walnuts (optional) in a bowl.

2. In a small bowl, mix all ingredients for the for the dressing.

3. Pour over salad and toss.

4. Chill for at least 2 hours.

Cook's Notes

This recipe easily doubles. You can make it ahead and keep refrigerated for 2 days. Serve on a bead of Boston or Bib lettuce.
