Amalie and Peg'sBlack Bean Soup

Amalie brought it back from Southern California

Healthy, simple and very quick last minute recipe. Spicy and satisfying. Pair with a salad or sandwich and fruit to make a complete meal.

Ingredients

1 can Black beans
1 quart Chicken broth
1 can Chunk chicken breast packed in water
1/4 tsp Cumin
3/4 cup Salsa (or to taste)
 Cilantro, chopped
 Shredded cheese (cheddar, monterey jack, etc.
1 can Refried beans (optional)

Preparation

Empty beans, broth, chicken, cumin and salsa in saucepan and heat, stirring to combine flavors. Add refried beans if you like a thicker soup.

Serve with chopped cilantro and shredded cheese. Enjoy!

Cook's Notes

Original recipe (Amalie's) did not call for cumin or refried beans. We enjoy it either way. Sometimes I'll make it without the refried beans, and then stretch it the next day by adding a can of beans.
