Black Bottom Cupcakes

This is a recipe passed down to me by my grandmother (well, my stepgrandmother). I guarantee these are some of the best cupcakes you will ever have - rich, delicious, and no need for frosting.

Ingredients

8 oz. Cream cheese

1 Egg

1/3 cup Sugar

1/8 tsp. Salt

Mix these ingredients together until smooth. Stir in a bag of chocolate chips (6 oz. size) and set aside.

1 1/2 cup Flour

1 cup Sugar

1/4 cup Cocoa (use quality cocoa - it makes all the difference in the world)

1/2 tsp. Salt

1 tsp. Soda

1 cup Water

1/3 cup Oil

1 Tblspoon vinegar

1 tsp. Vanilla

Preparation

Thoroughly Sift flour, sugar, cocoa, salt, and baking soda. Add water, oil, vinegar, and vanilla and beat well. Fill cupcake papers 1/3 - 1/2 full. top with a rounded spoonful of the cream cheese mix.

Bake at 350 degrees for 30 - 35 minutes. Makes about 18 cupcakes.
